Eating Is Humanity's Last Frontier

Food is instinct, art, memory, and one of the few domains AI still cannot easily enter. A reflection on eating through the senses, culture, and physical AI.

I live to eat good food.

I say that half-jokingly, but I also mean it. To me, eating is not simply a way to satisfy hunger. It is an extraordinary experience rooted in one of our most basic instincts, yet shaped by every sense we have, our memories, and our culture.

I think food is a total art form. I also think it may be one of the last frontiers that remains distinctly human—a territory that AI cannot easily enter.

When survival becomes entertainment

We can survive without paintings or music. We cannot survive without food. Yet around this fundamental act, humanity has built an astonishing number of layers of meaning.

We experience more than flavor and aroma. There is texture, temperature, sound, presentation, tableware, and space. We taste who made the dish, where the ingredients came from, and which techniques transformed them. We even consume the story of the place and time from which the dish emerged.

Food is nourishment, but it is also entertainment and communication. The person who cooks, the people who grow and transport the ingredients, the person who eats, and everyone sharing the table all take part in one experience. Few other forms of expression operate on so many levels at once.

AI thrives where data is abundant

Today's generative AI is built on the vast amount of data accumulated online: text, images, audio, and video that people have recorded and shared over many years. Models learn the patterns of our world from this material.

But moving from that world into physical AI—and especially into food—is not straightforward.

We have countless photographs of meals and videos of recipes. What we rarely preserve is data about what actually happened when someone ate the food: its sweetness and aroma, the resistance of a bite, the feel on the tongue, and the way its temperature changed. We do not capture how those sensations arrived together over time, or what they did to the body and emotions. Images and words alone cannot fully describe that experience.

An AI that truly understands food would need more than pictures of finished dishes. It would need large-scale, synchronized data connecting taste, smell, touch, hearing, and sight. It may also have to collect much of that data itself, moving through the physical world, touching things, and observing how they change.

Cleaning is comparatively measurable: a machine can detect the state of a floor or whether dirt remains. Robot vacuum cleaners are already part of everyday life, and they will become more capable. Understanding “delicious,” however, requires sensors and shareable data that today's robots simply do not have.

Deliciousness is more than sensory input

Even if we could measure every sense, that would not be enough to recreate the experience of eating.

A single bite can bring back a scene from childhood. That memory is not stored inside the dish as data. It emerges only through the life of the person eating—their family, their home, and their culture.

Someone tasting eel for the first time is unlikely to be reminded of eating it as a child. For someone who grew up sharing eel with their family, however, its aroma and texture may open a door to the past.

The same input can produce a completely different experience depending on the priors a person brings to it. Food is not a one-way transmission from an object to a body. It is a conversation between the plate in front of us and the life we have lived until that moment.

This tacit knowledge is difficult to isolate as a dataset. That is precisely why food can be such a powerful form of communication—and why it remains so difficult for AI.

A robot may cook, but it does not get hungry

In five or ten years, humanoid robots with bodies and sensory inputs closer to our own may prepare meals and collect far richer data about flavor and aroma. They may do work on our behalf or help create dining experiences tailored to each individual.

Still, the desire to eat belongs fundamentally to living things. A robot may replenish its energy, but it does not turn hunger into anticipation or recall its family through a single taste—at least, not today.

If the world contained only robots, there would be no need for food culture. Cooking exists as culture and entertainment because, at the end of the chain, there is always a human being.

AI will become deeply involved in growing ingredients, transporting them, preparing meals, and designing new experiences. But the final consumer will remain human, and humans will continue to decide what has value. Food is therefore not a domain that AI will erase. It is a domain through which AI will keep learning about us.

The last frontier

Food is instinct, technique, culture, memory, and art.

We experience it through the whole body. We bring together someone else's story and our own life. And the one who ultimately needs that experience remains human.

That is why I want to call eating humanity's last frontier.

As technology advances, what will AI and robots bring into the world of food? And what will remain something only a person can truly experience? I think the boundary between those two questions will become more interesting with every passing year.
